A Pepper Sneezing Fit

salt and pepper millTime for a little fun this week here at PepperMate. Out of all the spices on your rack, pepper is infamous for causing convulsing sneezing fits. I’ve never witnessed anyone sneezing from salt or nutmeg or even cinnamon. It seems like one of those little odd absurdities of life. So what gives pepper? Why do you make us sneeze like crazy?

Well it’s really not that surprising to learn that any finely ground elements, dust and tiny dirt particles included, in the air stimulate nerve cells in the nose which triggers the “sneeze reflex” to clear out our nostrils. Irritants in the nose equals bad so we sneeze to force them out. Pretty basic right?

But unlike other spices, the chemical composition of pepper actually causes us to sneeze more. (See it does get interesting!) Whether it be black, white, or green, pepper contains an ingredient called piperine. Piperine is actually what gives pepper its spicy flavor, but it’s also a known irritant for our nostrils. Just like dust, it will bother the nerve endings inside the mucous membrane and will cause you to sneeze. And on a slight, yet very interesting side note, a sneeze rushes air out of your nose at a 100 mph!

So be careful the next time you use pepper grinders. Keep the spicy flakes of pepper away from your sensitive nose!

The Scoop on Green Peppercorns

pepper grindersLast week we distinguished between black and white peppercorns, both used widely in cooking. But if you were surprised to learn that white peppercorns even existed, you’re in for a treat. Not many people, outside of the culinary world, even know about the elusive green peppercorn. Green pepper is similar to black in that it is made from unripe drupes. They are dried and treated in such a way to retain the green color.

Some are pickled, meaning the unripe drupes are preserved in brine or vinegar. Green peppercorns that are not preserved are actually quite popular in Asian cuisine, especially in Thai food. However, it’s not nearly as common here in the West, hence why most people don’t even know they exist to begin with! What does green pepper taste like? Fresher and less pungent than both black or white pepper. You purchase solely green peppercorns or find them mixed in with other peppercorns.

Although you can substitute black for green, they taste best with veggies, soups, salads, marinades, pate, creamy sauces, and game. Naturally you can enjoy them fresh when you place them in pepper and salt mills. Give green peppercorns a whirl and let us know how you like to use them.

best pepper millsDespite the catchy tune by Michael Jackson, it actually does make a difference which pepper you use. Although they may sometimes be used for their coloring, there is a difference in taste. Black pepper is produced from a green, unripe drupes of the pepper plant.  The drupes are briefly cooked in hot water to prepare them for drying. Drupes can be either dried in the sun or by a machine for several days. During the drying process, the pepper around the seed shrinks to a wrinkled black layer.

White pepper on the other hand is not picked until it is fully ripened from the pepper plant. It also consists of the seed alone and the dark skin is removed by a process known as retting. Essentially they are soaked in water for a week until the skin becomes soft and decomposes.

Well now you know they differ in the process, but what about flavor? Because the black peppercorns are taken when they are unripe, they tend to have a slightly hotter flavor and aroma. That’s why some recipes will call for one peppercorn over the other. Just keep in mind that if you use a pepper mill, the flavors will be even stronger because it is freshly ground and not processed in anyway.

They see it as a convenient way to enjoy freshly ground pepper, because let’s face it, there is a difference in taste. But did you know you can also grind salt too? Although salt is a mineral and you won’t necessarily taste a big difference, some people enjoy courser salt. Also keep in mind that there are several types of salt which should be used for different recipes. Salt includes kosher salt, crystalline sea salt, flaked sea salt, fleur de sel, rock salt, and pickling salt.

A salt mill can also serve as simply another way of storing different salt. You mind want to keep your kosher, or traditional table salt, in a standard salt shaker while your sea salt remains in the grinder. It’s more convenient than switching it to another shaker. Pepper: A Once Highly Sought After Spice

pepper millAs we use pepper grinders to sprinkle this tasty spice over our food, we don’t often think of it as a luxury. It’s a common spice found in almost every single household. It’s not even that expensive. But that wasn’t always the case. Pepper dates back to thousands of years ago, and back then, it was a precious commodity. It was called “black gold” by some and was actually used as a form of money.

Pepper originates in India, which is still a leading producer of the spice right behind Vietnam. It was obviously difficult for the rest of the world to get their hands on this spice. The spice trade, as a whole, had significant impacts on the world. Because of its rarity outside of India, pepper was extremely expensive and only used by the wealthy. It wasn’t until the 16th century that the Portuguese found an easier sea route to India and brought pepper to other countries to grow.

As pepper became easier to acquire, the supplies increased while the price declined. Today we can easily locate pepper in the spice aisle of the supermarket. Of course, if you’re serious about your pepper, you can order fresh peppercorns from countries around the globe, but expect to pay more than the grocery store price!
